Beyond the Blog | 04.12.2014

It’s been a long week, so I’m grateful for a relaxing weekend with minimal responsibilities. Scott and I haven’t been feeling the best and we’ve both traveled a lot the last few months; we’re happy to have a few weekends just the two of us before our crazy busy wedding weekend (just over a month!).

Most of my reading this week involved graphic novels and comic books; with some late nights and spending more time exercising, I didn’t spend as much time with my longer reads. I’ve got a hundred-and-a-handful pages left in The Plantagenets, and I’d like to finish it this week.

I did manage to write my next piece for 1:1000 – look for a post with more details later this week. I’m pretty pumped about this one, so I hope you all will like it.

In TV news, I binge-watched all but the last twenty minutes of Empire this week (so great to watch during exercise and cooking). I bought the soundtrack and I am addicted. Oh, and I LOVE the trailer for OITNB. Sorry not sorry, indeed.

It’s been a while since I tried my hand at cooking (everything on my Instagram? All Scott), so last night I whipped up a variation of this dish (more garlic, substitute olive oil for butter, and no parmesan) over lemon garlic sautéed squash, zucchini, and asparagus. Delicious and super easy!
